The table knife created for Anne-Sophie Pic begins not with the traditions of Laguiole, but with the language of her cuisine. Designed by Catherine and Bruno Lefebvre for Forge de Laguiole, the knife was conceived in close response to Pic’s culinary world. The designers looked to the harmony, fluidity and finesse of her compositions, translating those qualities into an object that would become part of the dining experience itself. The result is a knife with a long, dynamic silhouette. Its ebony handle extends elegantly into the hand, while the stainless-steel blade is exceptionally fine and precise. The length is functional as well as visual: it allows the blade to reach comfortably across larger contemporary plates, while the handle settles naturally into the hollow of the palm. Even the traditional Laguiole bee is reconsidered. Rather than appearing as a literal ornament, it is suggested through a discreet steel oval — preserving a connection to the Laguiole archetype while allowing the overall form to remain fluid and restrained. Most importantly, the knife was created around the food. Forge de Laguiole describes it as part of a new approach to table cutlery developed for softer textures and modern haute cuisine, where the quality of the cut becomes part of the sensory experience. It is an unusually complete collaboration between chef, designers and maker: Anne-Sophie Pic defining the culinary world, C+B Lefebvre translating it into form, and Forge de Laguiole bringing the object to life through its knifemaking tradition.
