About the series
Table Noir for 108

Table Noir designed for Michelin Restaurant 108

Table Noir for 108 was created to support the calm, complete table setting of the Copenhagen restaurant. The collection reduces the silhouette to clear lines and carefully resolved details, including the discreet connection that allows the spoon and fork to rest together.

Brilliant uses a highly mirror-polished stainless-steel finish, while Noir introduces a silky black satin-matte PVD surface. The two expressions are deliberately different, but share the same quiet proportions and four-piece place setting.

Questions about 108

What is the story behind Table Noir for Michelin Restaurant 108?

Table Noir created the 108 cutlery for Michelin Restaurant 108 in Copenhagen, where Chef Patron Kristian Baumann wanted to create an atmosphere of undisturbed tranquillity around the carefully prepared meal. The cutlery became part of this vision: an object designed not only for eating, but for contributing to the way the guest experiences the table. Food, surroundings, service and the objects held in the hand were considered as parts of one coherent dining experience.

Why was the 108 cutlery designed to be presented in a leather pocket?

The complete 108 place setting was conceived so that the cutlery for the dinner could be arranged together in a leather pocket before the guest arrived at the table. The presentation supported Michelin Restaurant 108's desire to create calm around the meal and made the guest's first encounter with the cutlery part of the experience. It reflects Table Noir's approach to the collection as more than a series of individual utensils: how the objects meet the guest was considered as carefully as their form.

What are the hidden design details of the Table Noir 108 collection?

The apparent simplicity of 108 conceals details developed with remarkable precision. The knife is constructed from just three lines — one straight and two curved — creating its characteristic light and balanced form. An even more discreet detail appears when the spoon and fork are placed together: Table Noir developed their forms so they can gently 'spoon' alongside one another. This almost invisible interaction took six months to develop and reveals the attention given to proportion, interaction and the smallest details throughout the collection.

What is the difference between NOIR and BRILLIANT?

NOIR and BRILLIANT reveal two distinctly different expressions of the same 108 design. NOIR gives the collection a deep Black Satin Matte character with a softly muted and tactile presence. BRILLIANT celebrates light through an exceptionally high level of polishing, creating an intensely reflective surface that extends into details as small as the spaces between the fork's tines. The two finishes demonstrate how surface and light can transform the character of the same carefully considered forms.

Has the Table Noir for 108 cutlery received design recognition?

Yes. Table Noir is an award-winning design brand, and its cutlery created for Michelin Restaurant 108 was selected for 'Danish Design Now' at Designmuseum Danmark. Its inclusion placed an object conceived specifically for the restaurant table within the wider story of contemporary Danish design. The recognition reflects a collection in which quiet forms, careful proportions and almost invisible details come together to shape the guest experience around the table.
